Ingredients

  • Lean ground beef – 2 pounds
  • Olive oil – 1 tbsp.
  • Yellow onion (finely chopped) – 1
  • Garlic (minced) – 3 cloves
  • Tomato sauce – 3 cans (8 oz can)
  • Tomatoes with green chillies (diced) – 2 cans (14.5 oz can)
  • Beef broth – ½ cup
  • Chilli powder – 2 tbsp.
  • Ground cumin – 2 ½ tbsp.
  • Paprika – 2 tbsp.
  • Cocoa powder (unsweetened) – 2 tbsp.
  • Sugar – 1 tbsp.
  • Ground coriander – ½ tbsp.
  • Salt and black pepper – as per taste
  • Dark red & light red kidney beans (rinsed & drained) – 1 can each.

Method

  1. Take a large and deep skillet and place it over the medium-high heat. Add olive oil.
  2. Add finely chopped yellow onions and sauté for at least 3 minutes. Next, add finely minced garlic and sauté for another 30 to 40 seconds—transfer onions and garlic into a slow cooker.
  3. Again, place skillet over medium-high heat and add the minced beef. Stir occasionally and cook the meat until it turns brown. Once the beef has turned brown, drain the fat (you can leave 1 to 2 tbsp. of fat for taste, but it’s optional) and transfer the meat into the slow cooker.
  4. Add tomato sauce, beef broth, diced tomatoes, chilli powder, paprika, sugar, coriander, cocoa powder, salt, and pepper. Stir and mix well.
  5. Cover the slow cooker with lid and cook the beef chilli on low heat for 5 to 6 hours.
  6. Add kidney beans and cook for two more minutes.
