Barbecue chicken is one of those dishes you definitely don’t want to wait for until summer comes. When I get a craving for tender, smokey tasting chicken meat, I simply get out my slow cooker. This recipe is very easy and fast to make. Preparation time is about 5 minutes and by the time you come back from shopping the meat is ready and can be served with any chosen side dish (potatoes, fries, salad…).
The barbecue chicken meat comes out extremely tender and moist and usually doesn’t need any additional seasoning because it soaks up a lot of flavour from the barbecue sauce. You should be careful here though. Don’t go for a cheap barbecue sauce that you usually wouldn’t eat with other dishes. Use your favourite brand and maybe try out a few different ones until you find the right combination. The other ingredients should normally be available in your pantry.
- 4 boneless chicken breasts
- 1 bottle barbecue sauce (your favourite)
- 1/2 cup white vinegar
- 1/2 cup sugar
- 1 onion
- 1/2 tsp garlic powder
- 1/2 tsp chilli flakes
- Clean the chicken breasts and remove any bones that might still be hidden somewhere.
- Cut the onion in large pieces and place at the bottom of your slow cooker.
- Add the chicken breasts on top.
- In a small bowl combine the bbq sauce, white vinegar, sugar, garlic powder and chilli flakes. Pour the liquid over the contents of your slow cooker.
- If the liquid doesn’t cover everything, add a little water. Turn on your crock pot on low and let cook for about 5-6 hours.
You can use chicken wings or thighs as well!
