- What Cherries to Use for The Cherry Pie Recipe?
There are two types of cherries tart and sweet. Rainier and Bing are the famous sweet cherries, and you’ll find these fresh cherries in stores near you. For this pie cherry recipe, you’ll need fresh Bing and rainier cherries. You can also use canned or frozen cherries as well, but make sure to thaw them before filling.
- How About Making Pie Filling in Advance?
Yes, you can make a pie filling in advance. You can prepare it on a stovetop, cool it at room temperature. Transfer filling into an airtight container and use it for one week if you place it in a fridge and up to one month if you freeze the filling.

Ingredients
For Filling
- Granulated sugar – ¾ cup
- Corn starch – ¼ cup
- Fresh cherries (stemmed and pitted) – 1 ½ pound
- Vanilla extract – 1 tbsp.
- Kosher salt – ¼ tbsp.
For Pie
- Package prepared pie crusts – 1 (thawed, if frozen)
- Egg – 1
- Water – 1 tbsp.
- Coarse sugar – 1 tbsp.
Method
- Add corn starch, sugar in a large saucepan, and whisk the ingredients. Add vanilla extract, salt, cherries, and mix the cherries in corn starch mixture. Place the saucepan on medium heat, when cherries start to break, and mixture thickens, remove the saucepan. Cool the mixture at room temperature, or you can transfer it in an airtight container and place it in the fridge for longer use.
- To prepare the pie shell, place the rack in the oven with a baking sheet on top and preheat the oven at 375o Unpack the pie dough and put it in a pie pan, press the dough gently so that it touches the bottom of a pie pan and press it along the sides as well. Don’t press hard because it can puncture the dough.
- Prepare egg wash by cracking an egg and whisking water in a small mixing bowl. Brush the crust with egg wash and transfer the pie filling. Set egg wash aside for later use.
- Unpack the second pie dough and make one-inch wide strips. Transfer the strips on the top pie and create a lattice pattern.
- Use the egg wash to brush the crust and sprinkle coarse sugar all over the crust. Now, transfer the pie into the oven and bake for 40 to 45 minutes. If the crust becomes brown quickly, you can use aluminum foil to cover it.
- Take out the pie and cool it on a wire cooling rack for 4-hours before you serve.
