  1. Ragu sauce or as you call it meat sauce is an important ingredient of slow-cooked lasagne. It would be best if you use high-quality tomato passata to prepare a balance Ragu sauce.
  2. When you’re preparing slow-cooked lasagne to make sure to add grated carrots, carrots will work as a natural sweetener. They’ll mix well with the minced meat and make the sauce tastier without adding more mince.
  3. You can add garlic cloves and bay leaves to enhance the flavour of bechamel sauce.

Ingredients

For Ragu Sauce, you’ll need:

  • Minced beef – 500 g
  • Onion (finely diced) – 1
  • Celery stick (finely diced) – 1
  • Carrot (grated) – 1
  • Garlic cloves (minced) – 3
  • Tomato passata – 500 g
  • Tomato puree – 4 tbsp.
  • Thyme, basil, oregano – 1 tbsp. each
  • Worcester sauce – 1 tbsp.
  • Beef stock – 1
  • Salt and pepper – as per taste
  • Oil – 2 tbsp.

For Bechamel sauce you’ll need:

  • Butter – 80 g
  • Plain flour – 80 g
  • Milk – 750 ml
  • Garlic clove – 1
  • Bay leaves – 2
  • Salt – ½ tbsp.

For preparation you’ll need:

  • Lasagne sheets – 400 g
  • Cheese grated (cheddar, mozzarella, parmesan, as per your choice) – 200 g

Method

For cooking beef Ragu follow these steps:

  1. Take a pan, place it on medium heat and add minced meat. Cook until meat turns brown and drain any excess fat present.
  2. Add oil, carrot, onion, celery, herbs, garlic, and seasoning. Cook until vegetables turn soft. Now, add the tomato passata, puree, and Worcester sauce. Make sure to stir continuously, as you add all the ingredients.
  3. Take stock cubes and put them into hot water, once they melt, add them into the pan, mix and cook for ten minutes. It will make sauce thick and remember, you don’t have to simmer too much because moisture is needed for pasta sheets. Set aside because now its time to prepare the bechamel sauce.

To prepare bechamel sauce, you need to follow the following steps:

  1. Take a pan, add butter when it melts, add flour. Remember to stir continuously while adding flour because it will make a thick paste which is needed for the sauce.
  2. Now, lower the heat and add milk. Keep stirring slowly to avoid the formation of lumps. Add salt, bay leaves peeled garlic cloves, and cook for another five to ten minutes.
  3. Remove from heat, discard bay leaves and garlic cloves.

For lasagne construction, follow these steps:

  1. To construct lasagne, take a slow cooker and fill the cooker with a thin layer of Ragu sauce. Next, add a layer of pasta sheets over Ragu sauce. Cover it with bechamel sauce and pour grated cheese. Repeat the process by filling again with Ragu sauce.
  2. After the final pasta layer, add a thick layer of bechamel sauce, making sure that the entire sheet of pasta is covered with sauce. Sprinkle the grated cheese and slow cook. For high heat 2 to 2.5 hours and for low heat 4 to 4.5 hours.
  3. Cook until the pasta has turned soft, you can check the pasta softness with a skewer.
