1. Baby Spinach Salad with Dressing of Warm Brown Butter

Ingredients
- Baby Spinach – ½ pound
- Pecorino Romano (shaved) – ¼ cup
- Pecans (toasted) – ¼ cup
- Red onions (pickled) – 1/8 cup
- Unsalted butter – 4 tbsp.
- Mustard – 1 tbsp.
- Honey – 1tbsp.
- Cheese – as per requirement
- Balsamic vinegar – 1 tbsp.
Directions
- Add baby spinach, pickled onions, pecans, and cheese in a large bowl.
- Take a skillet or a saucepan, place it on medium heat and add butter. Once the butter has melted, start whisking the butter until it turns light brown. Remove skillet from the heat and add honey, vinegar, and mustard. Keep whisking until all the ingredients are mixed properly.
- Drizzle the dressing over the salad, mix.
Serve the delicious baby spinach salad.
2. Kale Salad with Parmesan, Apricots, and Avocado
Kale salad with parmesan, apricots, and avocado is another salad recipe that will make your salad fun.
Ingredients
- Dino or Tuscan kale – 6 ounces
- Apricots (dried) – 6 ounces
- Cooked beans – 1/3 cup
- Almonds – 1/4 cup
- Parmesan cheese (flakes) – 8 to 10
- Olive oil – 1 tbsp.
- Red vinegar – 2 tbsp.
- Avocado – 1/2
- Salt and pepper – as per taste
Directions
- Take a piece of kale, fold it, and use your fingers to tear the inner stem. Repeat the process with all other kale leaves. Next, shred or chop the leaves into small pieces in a mixing bowl.
- Take apricots and cut into small pieces, add them into the bowl with kale. Now add cheese, beans, and almonds into the bowl. Take a separate cup or a small bowl, add olive oil and vinegar and mix properly. Pour the mixture on the salad, add salt and pepper as per taste. Use your hands to toss and mix all the ingredients.
- Cut avocado into small cubes and add it in the salad.

Ingredients
- Red-leaf and romaine lettuce (shredded) – 1 head
- Red cabbage (shredded) – 1 head (small)
- Endive (chopped) – 1
- Shallots – 6
- Dried dates (chopped) – 1 cup
- Smoked salted almonds (chopped) – 1 cup
- Kidney beans – 1 ½ ounce
- Chickpeas – 1 ½ ounce
- Goat cheese – 4 ounces
- Salt and black pepper – as per taste
For Dressing
- Light vinegar – 3 tbsp.
- Olive oil or safflower oil – 1/2 cup
- Avocado – 1
- Chicken meat (cooked)
Directions
- Take a large bowl and mix all the ingredients lettuce, cabbage, endive, shallots, beans, almonds, dried dates, chickpeas, goat cheese, salt, and black pepper.

Ingredients
- Red onions (thinly sliced) – 1/2
- Tomatoes – 1 pound
- Vinegar (Red wine) – 2 tbsp.
- Garlic clove (minced) – 1
- Flaky sea salt – as per taste
- Olive oil – 1/4 cup
- Red bell pepper (cut into the one-inch piece) – 1
- Cucumber (thinly sliced) – 1/3
- Kalamata olive (pitted) – 1 cup
- Fresh dill (chopped) – 1/4 cup
- Mint leave (chopped) – 1/4 cup
- Feta cheese (crumbled) – 1 cup
- Black pepper – as per taste
Directions
- Take a bowl of cold water and place red onions in the cold water for 15-minutes. Take a medium-sized bowl and cut tomatoes in a chunk and set aside. Now, take a large bowl and put garlic, vinegar, salt, and whisk. While whisking add olive oil and keep whisking until the ingredients are combined.

- Pork Carnitas (Slow cooked) – 2 cups
- Avocado pickles (large dice)
- Tortilla chips (crushed) – 1/4 cup
- Pepitas (toasted) – 1/4 cup
- Cilantro or lime dressing – 1/2 cup
Directions
- Take a large bowl and toss together brussels sprouts and mustard greens. Next, take a medium-sized bowl and add and mix lemon juice and apple slices.
- When ready to serve, divide the mixture of mustard greens and sprouts in four plates and top each plate with a quarter of avocado pickles, apple slices, tortilla chips, pork carnitas, and pepitas. Drizzle with cilantro or lime dressing and serve.
