Who doesn’t love chocolate cake? In our household it’s the cake of choice most of the time. So it could be a major disappointment if the boys went to eat a choccy cake I made and it’s dry. To prepare the beetroot and chocolate cake, follow the steps below.
Before we begin, the beetroot cake recipe uses a food processor, but you can mix it by hand if you don’t have one.
Ingredients
- Cooked beetroot (my trick is to use a jar of pickled beetroot!)– 200g
- Eggs – 3
- Sunflower oil – 200 ml
- Unrefined sugar – 200g
- White flour – 175g
- Baking powder – ½ tsp.
- Cocoa powder – 50g
- Dark chocolate chips – 100g
For Ganache
- Dark chocolate chips – 100g
- Double cream – 140 ml
- Unrefined golden caster sugar – 1 tbsp.
Method
To prepare this delicious beetroot chocolate cake, follow this super easy method step by step:
Step # 1
Heat the oven to 180oC. Line the base of a 9-inch round cake tin with baking paper.
Step # 2
Dry and drain the beetroot. Next, chop the beetroot and put it in a food processor. Keep blending the beetroot until it becomes smooth, like a paste. Add sugar, oil, and eggs and mix again.
Step # 3
Add all the remaining cake ingredients into the food processor and blend until all the ingredients are mixed well.
Step # 4
Take out the mixture from the food processor, spread it on the cake tin and bake for 50 minutes or until a skewer comes out neatly. Allow it to cool for 10 minutes and take the cake out and allow it to cool. Simple.
Step # 5
To prepare the ganache, pour the packet of double cream into a pan and add unrefined sugar. Next, heat the mixture until it begins to boil.
Step # 6
Take off the heat and pour the mixture over dark chocolate chips. Keep stirring until the chocolate chips have melted and the mixture becomes smooth. Allow the mixture to cool so that it becomes thick to pour over the cake.
Allow to set, cut the slices, and enjoy this delicious, moist, sweet chocolate beetroot cake!
