- Almond flour or panko breadcrumbs – ½ cup
- Parmesan cheese (grated) – ½ cup

- Garlic powder – ½ tbsp.
- Salt and pepper – as per taste
- Olive oil (for spraying)
Method
- Cut zucchini in the shape of fries about 3 to 4-inch long. Take a small bowl, add almond flour, parmesan cheese, salt, and pepper. Mix all the ingredients.

- Baking powder – 1 tbsp.

- Granulated sugar – 1/3 cup
- Canola oil – ¼ cup
- Egg – 1
- Sour cream – 2 tbsp.
- Peanut butter – 2 tbsp.

Method
- Take a non-stick baking dish, spray the sides and bottom with cooking spray, and preheat air fryer to 330o
- Take a medium mixing bowl, add baking powder, all-purpose flour, baking soda, salt, and mix well. Set aside for later use.
- Next, take a large bowl, add bananas and mash using a fork. Add oil, egg, sugar, peanut butter, sour cream, vanilla extract, and mix well. If you want, you can add walnuts or mini-sweet chocolate chips as well.
