Sometimes the simple dishes are the best, plus if we’re trying to save on the pennies, don’t we all love using ingredients we already have? I know the answer is yes! That’s why I love Shakshuka. It’s a really quick, easy and affordable dish for all the family. Perfect for breakfast, lunch or dinner. It’s one of those few dishes that really is versatile.
Shakshuka is a North African tomato stew style dish. It’s made with lots of store cupboard herbs and spices which you can always alter to your liking. The main ingredients are chopped tomatoes and eggs. To be honest, you can kind of throw in whatever veg you have at home too! It’s also a one-pot wonder. Everything is cooked in the one pan and can be served straight onto the plate. Brilliant!

Serves: 4
Cooking Time: approx 15 minutes
INGREDIENTS
- Low-calorie cooking spray oil
- 1 sliced red onion
- 1 sliced and deseeded red pepper
- 2 chopped garlic cloves
- ½tsp ground cumin
- ½ tsp mild chilli powder
- 400g tin chopped tomatoes
- A handful of cherry tomatoes
- Pinch granulated sweetener
- Squeeze lemon juice
- 100g spinach
- Handful chopped fresh coriander
- 4 eggs
INSTRUCTIONS
- Spray a non-stick frying pan with the cooking spray and place on medium heat. Add onions, pepper and garlic. Fry for 5 mins then stir in the cumin and chilli powder – add more or less depending on your taste.
- Stir in tomatoes, sweetener and lemon juice. Add the spinach, cherry tomatoes a touch of salt and pepper (you can also add bell peppers, courgettes etc… anything leftover in the fridge) – stir, cover and cook on low for 5 minutes.
- Sprinkle half the coriander over the tomatoes, then make 4 holes in the tomato mixture and crack an egg into each one. Season the eggs with salt and pepper, cover and simmer until your eggs are how you like them. I prefer hard eggs with this dish so around 10 minutes.
- Remove from the heat, sprinkle the rest of the coriander on top and serve! You can take the pan to the table and dish directly from that which is always a nice touch! It’s a one-pot wonder!
